Klippfisktilvirkingen foregikk på svabergene i byens utkant, og på øyene rundt omkring. Svabergene var fine tørkeplasser og værlaget var gunstig i mars, april og mai, med passende temperatur, tilstrekkelig vind og ikke for mye regn.
Under tilvirkingen ble den først vasket, saltet og så tørket. Om natta og i dårlig vær ble fisken stablet i små la. Fiskestablene ble dekket med paraplyformede trehatter, kalt «fiskflak»
